Jerk Seasoning are the spices used in the Jamaican Jerk style of cooking.
Jerk seasoning principally relies upon two items: allspice (called “pimento” in Jamaica) and Scotch bonnet peppers (among the hottest peppers on the Scoville scale). Other ingredients may include cloves, cinnamon, scallions, nutmeg, thyme, garlic, salt, and pepper.
Jerk seasoning is traditionally used on chicken and pork. But it is becoming more common on fish, beef, and sausage.
