What is Au Jus?

JUS is French for the natural juices given off by meat when cooking.

AU is French for… “Awww, this stuff is good!”

To most Americans Au Jus is the sauce put on meat or served in a bowl for dipping.  The sauce is made from the meat juices and often enhances with wine, soy sauce, Worcestershire sauce or other ingredients.

Beef Au Jus

Au Jus is used by some BBQers as an ingredient in their injection for beef brisket.  When smoking beef brisket the injection helps keep the brisket moist and adds some additional beef flavor.

In his book Smokin’ with Myron Mixon: Recipes Made Simple, from the Winningest Man in Barbecue, Myron includes a recipe for a Beef Injection and Marinade that uses Minor’s brand beef au jus concentrate.  We have tried this injection and liked it.  Get the book and check it out for yourself.
